Quick Apple & Red Saurkraut in a Cast Iron Skillet

2 tbsp vegetable oil

1 small red onion,sliced

1 tart apple,thinly sliced

10 oz. finely shredded red cabbage

1\4 c cider vinegar

1 1\2 tbsp kosher salt

1 1\2 c apple cider

1 tsp caraway seeds

Heat oil in a cast iron skillet over medium heat.Add onion & apple and cook stirring constantly,until it begins to brown,about 1-2 mins.Add cabbage,vinegar & salt.Cook,stirring frequently,for 2 mins.,or until cabbage has wilted.Add the cider and caraway seeds & bring to a boil.Lower the heat & simmer the kraut for about 10 mins., until the cabbage is tender and a few tbsp. of the juice remain.
