Cast Iron Skillet Plum Perfect Chicken Stir Fry

1 skinless,boneless chicken breast half or turkey breast tenderloin steak(3 oz)

1\2 cup fresh pea pods

1 Tbsp red plum jam or current jelly

2 tsp vinegar

2 tsp soy sauce

1\2 tsp cornstarch

1\4 tsp grated gingerroot or dash of ground ginger

Nonstick cooking spray

2 thin slices onion,separated into rings

1 tsp cooking oil

1 plum,pitted & cut into wedges

1 Tbsp raisins

cooked rice

Rinse poultry & pat dry.Cut into thin strips.

Combine jam,vinegar,soysauce,cornstarch & gingerroot.Set aside.

Spray cold medium size cast iron skillet with nonstick coking spray.Heat over medium heat.Add onion,stir fry 2 mins. Add pea pods. Stir fry 1 min. remove from skillet.

Add poultry to skillet(add 1 tbsp oil if necessary.) Stir fry 2-3 mins. until no longer pink.Push chicken from the center of the skillet.Stir sauce: add to center of the skillet. Stir until thick & bubbly.

Return cooked vegetables to skillet,stirring to mix.Add plum,raisins & put pea pods back into skillet.Stir all ingredients together to coat with sauce.Cook & stir 1 minute more until heated through.Serve immediately over hot cooked rice.
