Quick and Easy Beef Barley Soup

I am not feeling well today. I was thinking that a nice bowl of soup is just what the doctor ordered. I do not feel like getting overly involved in a complicated soup. I came across this quick and easy beef barley soup that I can throw together and just let it cook until it’s done.

Set your Dutch oven or large cast iron skillet on your stove top.


4 c. beef broth or stock

1\2 lb. of a good cut of beef, cut into 1\2″ pieces

1 medium onion(chopped)

1 handful baby carrots

1 rib celery(chopped)

2\3 c. barley

1\2 tsp. salt

1\4 tsp. black pepper

1 bay leaf (optional)

Do not brown the meat. Just throw everything into your cast iron Dutch oven, and cook until the barley is tender.

This recipe is very adaptable. You can cook it on the grill for cold weather camping or tailgating. It can also be made at a scouting event over an outdoor fire pit.
