Lent season is upon us. A great time to visit or have a Friday Night Fish Fry.

It does not have to be Lent to have a fish fry. But many Roman Catholics (and a few other Christian factions) strive toward the regulation of the no meat policy on Fridays during the Lent season. Let’s face it, you can only eat so much pizza. Many places have them year round. Lots of pubs and taverns serve up a fish fry every Friday regardless of religious background. Some places offer it year round and on a daily basis.

The biggest regions that have a Friday Night Fish Fry tend to be the South Eastern United States, The Northeast and the Mid West. Wisconsin and Upstate New York are big on the Friday Night Fish Fry. Living so close to the Great Lakes has definitely influenced the menu. The Great Lakes Fish Boil is also a great social and party function in these regions. But, not every one likes the boil. Almost everyone loves deep fried food. A typical Fish Fry will come with coleslaw and french fries too.

In the South, things like hushpuppies have been added to the mix. Hushpuppies are deep fried, seasoned corn meal balls. If you’ve never had a hushpuppy, it is time to try one of these delectable ditties out. There are many versions, some actually even have corn in them.

You can have your own Friday Night Fish Fry right at home. All you need is a counter top deep fryer, or for a larger fish fry, an outdoor propane deep fryer. You can bread, corn flour, or beer batter the fish before you deep fry it and then deep fry some french fries and hushpuppies.

The type of fish is your preference. Local fresh fish tends to be what any region uses. Lake fish in the lakes region, or catfish in the south.  Where I live, near the Atlantic Ocean, most fish used for a Friday Night Fry is flounder. Go to your local fish market and see what is fresh and available. Many places on the West Coast now, have fried fish, but they like to make tacos with them. I have not had the opportunity to sample a fish taco yet, but they seem to be spreading from the west eastward. They are becoming quite popular nationwide.

Whatever you decide to do…go out or eat in…whatever your religious upbringing…remember that fish is brain food anyway. We can all use some more smarts in the world.

It is finally Superbowl Sunday. The big day has arrived. Many folks will be watching, eating, drinking, participating in our American passtime. Tailgating, barbecuing, smoking ribs, making chili and deep frying Buffalo wings in their counter top deep fryers. Drinking beer, eating, and watching football with family and friends. People that don’t watch football usually even participate in one form or another. Even if it is just to watch the half time show or just for the commercials. We all still have to eat anyway so why not eat game day food.

Whatever you are doing today…remember to have a designated driver, eat, drink, be merry. Enjoy this American passtime. And, don’t forget., now that football season is over, that just means that racing season is about to begin and March Madness is right around the corner. That also means crocuses, car shows and concerts! Enjoy!

It is common to find that only about 20 percent of the United States population deep fries food on a normal basis. This does not include the commercial end, nor the occasional french fries while having dinner out, or fried dough or funnel cakes at the fair. I’m talking about people that own a counter top deep fryer, or cast iron stove top deep fryer that deep fry foods on a normal basis. Even half the people that own turkey fryers only use their turkey fryer at Thanksgiving or other holidays. I would have to say that of that 20 percent, at least 15 percent are located in the more southern regions of our country. I tend to think that the northern folks boil, steam, and stew their foods more often than frying. I don’t know if that is because of colder climates and ancestral histories and traditions, but that is my take on the matter.

The other 80 percent of America, I’m thinking are more health conscious. The fear of high cholesterol has put a damper on the deep frying world. But here again, if you deep fry the foods properly, there should not be a lot of oil absorption. If your temperatures are right,  you bring your temperatures back up between batches of food, and don’t over crowd the food, a proper moisture barrier will be made, keeping food moisture in and the oil out. Anything in moderation is ok as well. If you eat deep fried foods every day you probably aren’t worrying about your cholesterol anyway.

Having a deep fryer of your own can be fun and add to your menu options though. You don’t need a large outdoor propane deep fryer, but having one of those to tailgate with or  just to add to your outdoor cooking equipment is a nice option. An outdoor turkey fryer will not only deep fry, you can steam, boil, stew and simmer with them too. They are a great addition to any tailgater’s gear or for the back yard entertainer. Make chili outdoors for your big Superbowl party. Have a Low Country Boil at the end of the summer. Have the gang over for steamed lobster, corn, and clams on the 4th of July. If you have a turkey fryer, utilize it!

The point is, for those of us that choose to deep fry, we love it, and do it to add flavor and excitement to our lives. I don’t deep fry every day, but I like having the option of changing up my menu once in a while. I love to cook, and love to feed people. It makes me happy, and the people I feed usually go away happy too.

Even if you have planned your Superbowl apps & entree, you still need a great dessert. Chili cheese dip, chips, onion dip, cheese, cracker, pretzels. You have your deep fryer going for wings, the slow cooker filled with chili, you may even be using your grill or broiler. After the food is all eaten you need a recipe for a hearty dessert to complement your menu or just a  sweet yet savory addition to your entree menu.

Here is a great one to add:

Krittor’s Sweet Tator Pie:

4 to 6 sweet potatoes

8 cinnimon sticks

1 or 2 bottles of dark beer

4 cloves of garlic

1lb. of thick cut bacon

2lbs of sweet Italian sausage

2 tsp. of vanilla

2lbs of cream cheese

Peel tators and slice about 1/4 inch thick (cut like tator chips) Put in a zip lock bag.

Mix beer , garlic cloves , vanilla.

Pour over cinnamon sticks and tators in the zip lock. Let set in fridge for about 4 hours.

Cook an drain Italian sausage

Lay down bacon in the bottom of a 9x 13 baking pan (one layer )

Strain tators (Don’t throw out the beer )

Lay slice of tators over the bacon.

Take the sausage and layer it over the tators.

Over that lay down another layer of tators.

Take an mix 2 cups of beer with the cream cheese.

Layer it on top of the tators then cover with foil an bake at 375 for bout 35 to 40 min (depends on how thick the tators are.)

Now you have a Krittor sweet tator pie.

So…what will you be cooking for the Superbowl? Are you just making finger foods and appetizers? Having a big hero? Deep frying wings in your counter top deep fryer? Making a big pot of chili in your turkey fryer? Slow cooking ribs in your BBQ smoker?

Whatever you are doing, cooking or just participating, the Superbowl is an American passtime. Even if you aren’t a football fan…odds are you will be watching the game, even if it is just for the commercials. Many people partake…even if they aren’t true fans. Even if it is not for the game or the commercials…odds are you’re in it for the food and the party.

No matter what you decide to do…have fun, be safe, eat hearty, and let’s hope for a good game!!!! !

I am waiting for a delivery of counter top deep fryers from UPS. I don’t know if they are a day behind due to the snow, but I am getting tired of waiting. Just because something is coming ground does not mean that it should take forever. Unfortunately, I have had much better luck with the United States Post Office. I have an order that needs to go out and my client has been waiting. I feel quite bad and don’t know what to do anymore. The delivery is in limbo somewhere and I an at wits end.

A very decadent snack food that is becoming more popular is the deep fried candy bar. It not only sounds decadent, it tastes decadent too. You can use any kind of candy bar you like. You can take lrger bars and cut them into bite sized pieces, you can use fun size bars, or you can go for the total gluttony and do a whole bar.

Typically you can go with your own dough or batter. In a pinch you can use pre-made pizza dough or tubed crescent dough.

One homemade dough mix recipe follows:

Measure 1 cup self-rising flour into a bowl, and whisk in half cup of  soda water to make the batter Adding more of the soda water if the consistency is too thick; you want this just thick enough to adhere easily to the candy bar. The best way to check is to turn a candy bar in it; if the batter sticks well enough, it’s fine.

Another batter recipe:

1 cup sifted flour
1 teaspoon salt
3/4 cup cold water
1/4 teaspoon baking powder

Mix flour, salt, and water until smooth, cover, and let stand at room temperature 20 to 30 minutes. Stir baking powder into batter. Coat candy bars.

In the mean time, heat the frying oil in your deep fryer. When it comes up to temperature, 350-375 degrees F. place your candy bars in the fryer basket. Fry for about 3 mins. or til golden brown and crispy. Drain on paper towels. Sprinkle with powdered sugar. Serve.

Thinking about buying a deep fryer but don’t know what kind to get? There are some things to consider when thinking about purchasing a deep fryer.

Do you deep fry foods a lot? Do you think that you will once you purchase a deep fryer? Do you cook a lot? Do you like to cook? These are all things that you may wish to consider before purchasing any type of deep fryer.

If you don’t cook a lot, or don’t think that you will be deep frying a whole lot, a stove top deep fryer may be the way you want to go. It is usually a handled pot or stock pot with a basket for deep frying. It may be stainless steel, aluminum, or cast iron. The pot may be used for other things besides deep frying. You can boil, stew, simmer, and steam in these pots as well. And as far as the cast iron pots go, they can be used for lots of different applications. Indoors, outdoors, on the grill, in a fire pit, in the oven, whatever. If you do have a small outdoor propane patio cooker, most of the stove top fryer pots can be used to on those as well. So, most stove top deep fryers are multi-purpose cookware.

Counter top deep fryers are a whole different entity. They are pretty much just that, a counter top deep fryer. Some are steamer/boilers but many only deep fry. Having the counter space to store one of these units is a consideration as well. My electric Masterbuilt counter top deep fryer is way too big for my small kitchen. I use it when I need it, when it cools, I drain the frying oil and put my fryer back in the closet. Some of the smaller units, like the Presto Fry Daddy, can actually be used multiple times before the oil has to be changed. Some of them actually come with lids or are self contained so that the oil can be stored right in it.

Outdoor deep fryers come in all shapes and sizes. A Cajun fryer for instance, is just a fryer. But on a much grander scale than your typical indoor deep fryer. These are a safer version of the outdoor deep fryer as the oil is heated by super heated air in self contained tubes that run through the oil. No oil and fire should ever come in contact as long as you are cooking safely and wisely. These outdoor propane deep fryers are easier to drain and filter your cooled frying oil too. They are quite portable and are great for tailgating, picnics, commercial applications, or your own back yard.

A turkey fryer, like those from Bayou Classic, are usually an outdoor propane patio stove with a stock pot that sits on top of the cooking surface. Again, a multi-purpose cooker that can be used anywhere that a propane grill can be used. They steam, fry, boil, stew, simmer, etc. Great for the all weather tailgate crowd. Steam lobster and corn in the summer, simmer a big pot of chili in the winter. Deep fry a turkey for the Thanksgiving game and Buffalo wings for the Superbowl.

There are even All-in-One units that not only deep fry, steam/boil, but also become a grill and/or BBQ smoker. Again a great piece of outdoor tailgating equipment or backyard unit especially for people with limited space.

So consider all options when deciding on what type of deep fryer will fit your needs best. Are you a hard core tailgater or just a home body? Will you be cooking for many or just a few? Will just a deep fryer do, or would you prefer a multi-purpose unit? There is a lot of information out there to help you make an informed decision. Happy frying!

People really do not understand what service is any m0re. Majority of the time they do not really even listen to what you are saying. If you are asking a legitimate question of someone…shouldn’t you get a proper response the first time? I guess I must be old school because that is certainly not how it works today. People that work in stores don’t even know how to give you money back from a cash register.

My company with a particular web server. They re constantly making changes. They have changed their IP address and contacted me telling me that I needed to change this information. I contacted someone directly at the company…she looked into it for me, said that I was fine, that nothing needed to be changed, it did not pertain to me. Well, guess what? My site is now down, because when I contacted them 2 weeks or more ago, apparently the girl, really wasn’t listening. Now, my deep fryer web site is down. It is holiday season, and the server company is closed through the New Year. Isn’t that just so pleasant??? All because when I tried to take care of the problem ahead of time… someone just wasn’t listening.

The service end of business in this country has gone to crap. Nobody cares. Everyone just wants money and to be lazy. I came from a different group of people. There actually used to be pride in this country. I think it’s time for me to move somewhere else!!!!

In this fast paced world, with both parents working, but maybe both parents not sharing the work load…what Mom doesn’t need more time? I don’t want to be unfair to any of the Dad’s out there that share the work load…and I don’t mean just mowing the grass once a week and washing the car. Being a parent is a job in itself, but working, taking care of kids, doing housework, cooking, cleaning, dishes, homework, managing the bills…has typically been laid on Mom’s shoulders while Dad works had, but comes home to relax from his hard day at work & Mom’s second job is just starting.

I myself, my kids older now, but going to college and both with jobs, am working 8 hours. I run a business from home on the side, take care of my partially handicapped significant other, and I just started some online college courses. What was I thinking??? I didn’t have time for myself before…I really have no time now. I cook, clean, do the bills, laundry, etc all on top of the other 12 hours a day that I need for my job, business, school, etc. Who doesn’t need some extra time?

Any thing to save time is a God send. A counter top deep fryer or counter top slow cooker is just what the doctor ordered. With a little prep while the oil is heating, you can have dinner deep fried in half the time it would take to roast something in the oven. Or, better yet, some prep early morning before work with a slow cooker, and viola! Dinner is already ready when you get home. Just need to ladle it into bowls or serve onto plates and you are good to go.

A little work, yet awesome meals, in half the time. Just what every Mom needs!
